Belgian Golden Strong Ale

Yeast Starter:

About 36 hours before the brew, let yeast sit at 70f. About 28 hours before the brew, boiled 5 ounces of DME in 1.4 liters of water for 10 minutes and cooled for 3 hours Shook to aerate, pitched yeast, covered with foil and placed at 70f.

Mash/Lauter/Sparge:

Heated 4 gallons of water to 160 in mash tun and added grain. Added heated water to adjust temperature to 145 and held for 45 minutes. Added heated water to adjust temperature to 155 and held for 30 minutes. Opened spigot 30 degrees and recirculated runoff until clear. Captured 6.5 gallons of runoff.

Boil:

Boiled through break, added corn sugar and continued for 40 minutes. Added bittering hops and boiled for 45 minutes. Added Coriander and Grains of Paradise and and boiled for 10 minutes. Added finishing hops and boiled for 5 minutes. Cooled with counterflow chiller into carboy and pitched yeast starter Took specific gravity reading of 1.075. Using funnel with filter will caused aeration. Fitted with stopper and airlock and placed at 70f.

Observations of tertiary stage (basement temperature) Kegging:

Took specific gravity reading of 1.014. Siphoned into 5 gallon ball-lock keg, bled air out with CO2 and placed under kegerator CO2. Siphoned remainder into 3 2-liter bottles, attached carbonator caps, bled air out and pressurized with 30 lb of CO2.
