you were interested in the clarity of the beer after bottling and
rechilling. i can report that after i got it out of the freezer on
friday night, it was still extremely clear.

you mentioned last time that you were trying to get your beers to the
next level of defect: freeness. i haven't done the reading to figure out
exactly what that means, but i have a feeling that you got there with
the dubbel. reading the dubbel description, i'd say you nailed it. not a
huge head producting beer, but the color was exactly right and i
definitely got the raisins and cloves as well as the monastary basement
feel. my pregnant wife, who can't have a beer but has to smell what i
consume, was very impressed with the aroma. 

i'd say that the beer gained in flavor over its taste-life. it was
fairly clean tasting when it first hit the tongue, but the complexity
grew as it made its way toward the gullet.
