Rattling Muffler Brew


Stout

This is a 2004 BJCP style 13a beer. It is being brewed using the second runnings (exhaust) and the yeast bed from the Little Katrina Imperial Stout brew session.

Activity Log

Boil:

Took second runnings from fridge and brought to a boil. Added 1 gallon of water plus DME and Candi Sugar. Brought to a boil again and added first hops. Boiled for 30 minutes and added second hops. Boiled for 30 more minutes and removed from heat. Cooled with cooling coil sanitized in iodophor solution. Siphoned into carboy used for Little Katrina primary fermenter still containing yeast. Took specific gravity reading of 1.056. Aerated by rocking carboy on towel. Fitted with stopper and airlock.

Fermentation:

Observation of primary (6 PM start @ 70 f): Transferred to 3 gallon carboy. Took specific gravity reading of 1.016. Temperature ~ 65 f.

Bottling/Kegging:

Boiled 1 ounce of corn sugar in 1 cup of water for 10 minutes, allowed to cool and placed in bottling bucket. Siphoned 1 gallon from carboy into bottling bucket taking specific gravity of 1.016 putting ABV at 5.2%. Filled and capped 9 bottles. Siphoned remainder of carboy into keg, refrigerated and pressurized to 30 lbs/sq inch with CO2.
